Beef and Beetroot Burgers £1.80 / £0.90 per serving

Beef mince is one of the cheapest meats to buy in your local supermarket. When regular burgers, meatballs and Spaghetti Bolognese get boring, try this delicious twist on a burger. Make sure you buy the leanest possible beef mince - it's healthier and tastes better. For the breadcrumbs use any old slice of toast or bred you have leftover. No sense in buying breadcrumbs from the shop! And this is 1 of your 5-a-day...in a burger!


50 g breadcrumbs
1 onion, finely chopped
75 g pickeld beetroot, finely chopped
250 g lean beef mince
1 beaten egg
salt and black pepper
1 tbsp vegetable oil
  1. Finely chop the onion and beetroot.
  2. Mix all the ingredients in a bowl.
  3. With your hands form the burger mixture into burgers the size of your palm.
  4. Fry them on a hot frying pan with vegetable oil, until fully cooked.
Spice it up!

Add some finely chopped capers to the burger mixture to make it even tastier.

Beef Stroganoff £3.60 / £1.80 per serving

This is the perfect recipe for those dark winter days, when you really don't want to leave your flats, which leaves you with heaps of time. Beef Stroganoff is easy to make, but gets better the longer it is in the oven, so be patient!

1 tbsp vegetable oil
250 g diced casserole beef
1 onion, chopped
2 garlic cloves, crushed
200 g mushrooms, washed and chopped
1 chicken stock cube
500 ml boiling water
2 tbsp tomato puree
200 ml sour cream
salt and black pepper
  1. Preheat the oven to 180°C.
  2. Fry the diced casserole beef in a frying pan with the vegetable oil until browned. Place the diced beef in an ovenproof casserole dish.
  3. Fry the onion, garlic and mushrooms in the same pan for about 5 minutes and add to the casserole dish.
  4. Add the boiling water with the chicken stock cubes and tomato puree in the casserole dish.
  5. Cook in the oven for 30 minutes.
  6. Add the sour cream and taste. Season if needed. Let it cook for a further 10 minutes.
Serve with...

...homemade mashed potatoes or boiled brown rice and some steamed vegetables.
