1 tbsp olive oil
1 aubergine, washed and roughly chopped (unpeeled)
1 courgette, washed and roughly chopped
1 red pepper, washed and sliced
1 onion, finely chopped
2 garlic cloves, crushed
400 g chopped tomatoes
1 tsp honey
salt and black pepper
- Prepare all the vegetables, so that they are reasy to go in the pan.
- Fry the onions and garlic with the olive oil in a large sauce pan.
- Add the rest of the vegetables. Lower the heat and let simmer for 10 minutes.
- Add the chopped tomatoes and honey. Simmer for 15 minutes or until vegetables are soft, but still crunchy.
- Season to taste.
Serve the Ratatouille with some fresh crusty bread. Simplicity itself!
